
Smoked Herring Salad
A refreshing salad recipe that uses expired smoked herring fillets. The fillets are safe to consume up to 3 days after the expiry date. Ensure proper handling and storage of ingredients to maintain food safety.
Ingredients
- 4 cups mixed salad greens
- 1 can (200g) smoked herring fillets, expired but still safe to consume
- 1 small red onion, thinly sliced
- 1 cucumber, sliced
- 1 tablespoon capers
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions
In a large salad bowl, combine the mixed salad greens, red onion, cucumber, and capers.
In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
Open the can of expired smoked herring fillets and drain the oil or brine.
Carefully remove any visible bones from the herring fillets and break them into smaller pieces.
Add the herring fillets to the salad bowl and drizzle the dressing over the salad.
Toss the salad gently to combine all the ingredients and coat them with the dressing.
Serve the smoked herring salad immediately as a light and flavorful meal.
