Ingredients
- 2 cups potatoes, peeled and diced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons butter
- 4 cups vegetable broth
- 1 cup milk
- 1/2 cup commercially bottled Russian salad dressing
- Salt and pepper to taste
- Chopped fresh parsley for garnish

In a large pot, melt the butter over medium heat.

Add the onion and garlic, and sauté until softened.

Add the diced potatoes and vegetable broth to the pot.

Bring the mixture to a boil, then reduce heat and simmer until the potatoes are tender.

Using a blender or immersion blender, purée the soup until smooth.

Return the soup to the pot and stir in the milk and Russian salad dressing.
