Ingredients
- 4 slightly expired quinoa cups
- 2 cups vegetable broth
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced onion
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste

Instructions

In a large pot, heat some oil over medium heat.

Add the diced carrots, celery, onion, and minced garlic. Cook until the vegetables are tender, about 5 minutes.

Add the vegetable broth, dried thyme, and dried oregano. Bring to a boil.

Reduce heat to low and add the slightly expired quinoa cups. Simmer for 15 minutes, until the quinoa cups have softened and absorbed some of the broth.
