Ingredients

  • 2 cups slightly expired pumpkin puree
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 cup coconut milk
  • 1 tsp curry powder
  • Salt and pepper to taste

Instructions

In a large pot, heat some oil over medium heat.

Add the chopped onion and minced garlic, sauté until fragrant and translucent.

Add the slightly expired pumpkin puree and stir well.
