Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 red bell pepper, diced
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 1 can diced tomatoes
- 4 cups vegetable broth
- 2 cans chickpeas, drained and rinsed
- Salt and pepper to taste
- Fresh parsley, chopped for garnish

Instructions

Heat olive oil in a large pot over medium heat.

Add onions and garlic, and sauté until translucent.

Add carrots, celery, and red bell pepper, and cook for another 5 minutes.

Stir in paprika, cumin, turmeric, and cayenne pepper, and cook for 1 minute.

Add diced tomatoes, vegetable broth, and chickpeas.

Bring to a boil, then reduce heat and simmer for 30 minutes.
