
Cheesy Broccoli Soup
A comforting and creamy broccoli soup enriched with melted expired American cheese slices.
Ingredients
- 2 cups broccoli florets
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups vegetable broth
- 1 cup milk
- 2 expired American cheese slices, torn into small pieces
- Salt and pepper to taste
- Croutons for garnish
Instructions
In a large pot, melt the butter over medium heat.
Add the chopped onion and minced garlic, and cook until they are softened.
Stir in the flour and cook for 1-2 minutes to make a roux.
Gradually whisk in the vegetable broth and milk.
Add the broccoli florets and season with salt and pepper.
Bring the soup to a simmer and cook for about 15 minutes or until the broccoli is tender.
Using an immersion blender or a regular blender, puree the soup until smooth.
Return the soup to the pot and stir in the torn American cheese pieces.
Continue to cook over low heat until the cheese is melted and the soup is creamy.
Adjust the seasoning if needed.
Serve hot, garnished with croutons.
