Ingredients

  • 1 cup onions, fresh chopped (past expiration date but still safe to consume)
  • 2 cups potatoes, peeled and diced
  • 6 eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

Preheat the oven to 350°F (175°C).

Heat olive oil in a non-stick skillet over medium heat.

Add the onions and potatoes to the skillet and cook until the potatoes are tender and the onions are golden brown.
