Ingredients

  • 4 cups onions, fresh chopped (past expiration date but still safe to consume)
  • 4 tablespoons butter
  • 4 cups vegetable broth
  • 1 teaspoon sugar
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 4 slices bread
  • 1 cup grated Gruyere cheese

Instructions

In a large pot, melt the butter over medium heat.

Add the onions and cook, stirring occasionally, until caramelized and golden brown.

Add the sugar and thyme, and continue cooking for another 2 minutes.

Pour in the vegetable broth and season with salt and pepper. Bring to a simmer and cook for 15 minutes.

Meanwhile, toast the bread slices and sprinkle the grated Gruyere cheese on top.
