
Octopus Stew
A hearty and comforting stew made with octopus purchased commercially frozen raw. Ensure the octopus is fully cooked to eliminate any potential bacteria.
Ingredients
- 1 kg octopus, commercially frozen raw
- 2 onions, chopped
- 4 cloves garlic, minced
- 2 carrots, diced
- 2 potatoes, peeled and cubed
- 2 tomatoes, diced
- 2 cups vegetable broth
- 1 cup white wine
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
Thaw the octopus according to package instructions.
In a large pot, heat the olive oil over medium heat.
Add the onions and garlic, and sauté until fragrant.
Add the octopus to the pot and cook for 5 minutes, stirring occasionally.
Pour in the white wine and let it simmer for 2 minutes to reduce.
Add the carrots, potatoes, tomatoes, vegetable broth, paprika, dried thyme, salt, and pepper.
Bring the stew to a boil, then reduce the heat to low and let it simmer for 30 minutes or until the octopus is tender.
Taste and adjust the seasoning if needed.
Serve the octopus stew hot, garnished with fresh herbs if desired.
