Ingredients

  • 1 cup slightly expired oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 2 ripe bananas, mashed
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract

Instructions

Preheat the oven to 350°F (175°C).

In a large bowl, combine the oats, flour, brown sugar, baking powder, baking soda, cinnamon, and salt.

In a separate bowl, mix together the mashed bananas, milk, vegetable oil, and vanilla extract.

Add the wet ingredients to the dry ingredients and stir until just combined.

Spoon the batter into a greased muffin tin, filling each cup about two-thirds full.

Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
