
Expired Oatmeal Pancakes
A delicious pancake recipe that uses expired oats, ensuring food safety by properly cooking the batter.
Ingredients
- 1 cup expired oats
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 egg
- 1 cup milk
- 2 tablespoons vegetable oil
Instructions
In a blender or food processor, blend the expired oats until they turn into a fine powder.
In a large bowl, whisk together the oat powder, all-purpose flour, sugar, baking powder, and salt.
In a separate bowl, beat the egg and then add the milk and vegetable oil. Mix well.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
Heat a non-stick pan or griddle over medium heat and lightly grease it with oil or butter.
Pour 1/4 cup of the pancake batter onto the hot pan for each pancake.
Cook until bubbles form on the surface of the pancake and the edges start to set, about 2-3 minutes.
Flip the pancake and cook for an additional 1-2 minutes, or until golden brown.
Repeat with the remaining batter.
Serve the pancakes warm with maple syrup or your favorite toppings.
