
Expired Oatmeal Energy Balls
These energy balls are a nutritious and easy snack that uses expired oats. Be sure to store them properly to maintain freshness.
Ingredients
- 1 1/2 cups expired oats
- 1/2 cup nut butter (e.g., almond, peanut)
- 1/4 cup honey or maple syrup
- 1/4 cup ground flaxseed
- 1/4 cup mini chocolate chips
- 1 teaspoon vanilla extract
- Optional: additional mix-ins (e.g., dried fruits, nuts, seeds)
Instructions
In a large mixing bowl, combine the expired oats, nut butter, honey or maple syrup, ground flaxseed, mini chocolate chips, and vanilla extract. Mix well until fully combined.
If desired, add any additional mix-ins such as dried fruits, nuts, or seeds. Mix until evenly distributed.
Cover the bowl and refrigerate the mixture for at least 30 minutes to firm up.
Once chilled, remove the mixture from the refrigerator and roll it into tablespoon-sized balls using your hands.
Place the energy balls on a baking sheet lined with parchment paper or a silicone mat.
Refrigerate the energy balls for another 30 minutes to set.
Transfer the energy balls to an airtight container and store them in the refrigerator for up to two weeks.
