A delicious and easy recipe for gingerbread cookies, using expired but safe molasses.
Ingredients
- 2 1/4 cups all-purpose flour
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/4 cup expired molasses
- 1 large egg
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, ginger, cinnamon, cloves, baking soda, and salt.
In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the expired molasses and egg until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Roll the dough into 1-inch balls and place them on the prepared baking sheet, leaving some space between each cookie.
Bake for 8-10 minutes, or until the edges are slightly golden.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Serve and enjoy!
