Ingredients

  • 2 pounds potatoes, boiled and cubed
  • 1 cup expired mayonnaise
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons pickle relish
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

In a large bowl, combine the potatoes, onion, celery, parsley, and pickle relish.

In a separate bowl, mix together the expired mayonnaise and Dijon mustard.

Pour the mayonnaise mixture over the potato mixture and gently toss until well coated.
