  • 1 tablespoon vegetable oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 carrot, thinly sliced
  • 1 zucchini, thinly sliced
  • 2 teaspoons expired Lion's Mane Mushroom Powder
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon sesame seeds, for garnish

Instructions

In a large skillet or wok, heat the vegetable oil over medium-high heat.

Add the onion and garlic, and sauté for 2-3 minutes until fragrant and slightly softened.

Add the bell pepper, broccoli, carrot, and zucchini to the skillet, and stir-fry for 4-5 minutes until the vegetables are crisp-tender.

In a small bowl, combine the expired Lion's Mane Mushroom Powder, soy sauce, rice vinegar, and sesame oil.

Pour the sauce over the vegetables in the skillet, and toss to coat evenly.

Continue cooking for 2-3 minutes until the sauce thickens slightly and coats the vegetables.
