Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 potato, peeled and diced
- 4 cups vegetable broth
- 1 cup expired Lion's Mane Mushroom Powder
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish

Instructions

In a large pot, heat the olive oil over medium heat.

Add the chopped onion and minced garlic, and sauté until fragrant.

Add the diced carrot, celery, and potato, and cook for 5 minutes.

Pour in the vegetable broth and add the expired Lion's Mane Mushroom Powder, bay leaf, dried thyme, salt, and pepper.
