
Laksa Noodle Soup
Transform your expired Laksa Instant Noodles into a comforting and flavorful noodle soup while ensuring food safety.
Ingredients
- 2 packs of expired Laksa Instant Noodles
- 4 cups vegetable or chicken broth
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 cup baby spinach
- 1/2 cup coconut milk
- 1 tablespoon vegetable oil
- 1 tablespoon lime juice
- Fresh cilantro, chopped (for garnish)
- Salt and pepper to taste
Instructions
Heat vegetable oil in a large pot over medium heat.
Add the sliced onion and minced garlic. Sauté until fragrant and translucent.
Pour in the vegetable or chicken broth and bring to a simmer.
Add the expired Laksa Instant Noodles to the pot and cook for 3-4 minutes until the noodles soften.
Add the sliced mushrooms and baby spinach to the pot. Stir and cook until the mushrooms are tender and the spinach wilts.
Pour in the coconut milk and stir well to combine.
Season the soup with salt, pepper, and lime juice according to your taste preferences.
Simmer for another 2-3 minutes to allow the flavors to meld together.
Serve the Laksa Noodle Soup hot, garnished with fresh cilantro.
