
Instant Coffee Pancakes
Delicious and fluffy pancakes made with expired instant coffee, perfect for a cozy breakfast.
Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon expired instant coffee
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
Instructions
In a large mixing bowl, whisk together the flour, sugar, expired instant coffee, baking powder, baking soda, and salt.
In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; the batter will be slightly lumpy.
Preheat a non-stick skillet or griddle over medium heat.
Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.
Repeat with the remaining batter.
Serve the pancakes warm with your favorite toppings, such as maple syrup, fresh berries, or whipped cream.
