Ingredients

  • 1.5 pounds boneless, skinless chicken breasts, cut into chunks
  • 1/4 cup expired honey
  • 1/4 cup Dijon mustard
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden skewers, soaked in water for 30 minutes

In a bowl, whisk together the expired honey, Dijon mustard, lemon juice, olive oil, salt, and black pepper to make the marinade.

Add the chicken chunks to the marinade, making sure they are well coated. Cover and refrigerate for at least 1 hour, or overnight for better flavor.
