
Honey Mustard Chicken Skewers
Expired honey is used in this recipe to create a flavorful honey mustard marinade for chicken skewers. The chicken is cooked thoroughly to ensure food safety.
Ingredients
- 1.5 pounds boneless, skinless chicken breasts, cut into chunks
- 1/4 cup expired honey
- 1/4 cup Dijon mustard
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Wooden skewers, soaked in water for 30 minutes
Instructions
In a bowl, whisk together the expired honey, Dijon mustard, lemon juice, olive oil, salt, and black pepper to make the marinade.
Add the chicken chunks to the marinade, making sure they are well coated. Cover and refrigerate for at least 1 hour, or overnight for better flavor.
Preheat the grill or grill pan over medium-high heat.
Thread the marinated chicken chunks onto the soaked wooden skewers.
Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Serve the honey mustard chicken skewers hot with your favorite side dishes.
Note: Make sure to discard any remaining marinade that has come into contact with raw chicken.
