Ingredients

  • 200g halloumi, slightly expired
  • 1 cup cooked quinoa
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup fresh parsley leaves, chopped
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

1. Slice the halloumi into 1/4 inch thick pieces.

2. Heat a non-stick pan over medium heat.

3. Cook the halloumi slices in the pan for 2-3 minutes on each side, until golden brown.

4. In a large bowl, combine the cooked quinoa, diced cucumber, diced red bell pepper, chopped mint leaves, and chopped parsley leaves.

5. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.

6. Pour the dressing over the salad and toss to combine.

7. Place the cooked halloumi slices on top of the salad.
