
Guava Jelly Thumbprint Cookies
A delicious cookie recipe that uses expired guava jelly, reducing food waste and ensuring food safety.
Ingredients
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/3 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- Expired guava jelly (60 days past expiry)
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking powder, and salt.
In a separate large bowl, cream together the softened butter and sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Roll the dough into small balls, about 1 inch in diameter, and place them onto the prepared baking sheet.
Use your thumb or the back of a spoon to create a small indentation in the center of each cookie.
Fill each indentation with a small amount of expired guava jelly.
Bake for 10-12 minutes, or until the edges of the cookies are lightly golden.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
