
Goat Milk Pancakes
A delicious and safe way to use expired goat milk to make fluffy pancakes.
Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup expired goat milk (7 days after expiry)
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
Instructions
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, whisk together the expired goat milk, egg, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix; a few lumps are okay.
Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
Serve the pancakes warm with your favorite toppings such as maple syrup, fresh fruits, or yogurt.
