
Goat Cheese and Spinach Stuffed Chicken Breast
A delicious and safe recipe that uses expired goat cheese crumbles and reduces food waste.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup spinach leaves
- 1/4 cup expired goat cheese crumbles
- Salt and pepper, to taste
- 1 tablespoon olive oil
Instructions
Preheat the oven to 375°F (190°C).
Using a sharp knife, carefully cut a pocket into each chicken breast.
In a small bowl, mix the expired goat cheese crumbles with spinach leaves. Season with salt and pepper.
Stuff each chicken breast with the goat cheese and spinach mixture, pressing the edges to seal.
Heat olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts until browned on both sides, about 2-3 minutes per side.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and no longer pink in the center.
Remove from the oven and let the chicken rest for a few minutes before serving.
Serve the stuffed chicken breasts with a side salad or roasted vegetables.
