
Zucchini Noodle Stir-Fry
A delicious and healthy stir-fry recipe that makes use of expired frozen zucchini noodles. The noodles are thoroughly cooked with other ingredients, ensuring food safety.
Ingredients
- 2 cups expired frozen zucchini noodles
- 1 tablespoon vegetable oil
- 1 small onion, thinly sliced
- 1 bell pepper, thinly sliced
- 1 carrot, julienned
- 1 cup broccoli florets
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sesame oil
- Sesame seeds (for garnish)
Instructions
Thaw the expired zucchini noodles in the refrigerator overnight.
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add sliced onion, bell pepper, carrot, and broccoli florets to the skillet and stir-fry for 4-5 minutes until crisp-tender.
Add the thawed zucchini noodles to the skillet and stir-fry for an additional 3-4 minutes until the noodles are heated through.
In a small bowl, whisk together soy sauce, hoisin sauce, and sesame oil.
Pour the sauce over the stir-fry and toss to coat the noodles and vegetables evenly.
Continue cooking for 2-3 minutes until everything is well combined and heated.
Garnish with sesame seeds.
