
Lasagna Stuffed Peppers
Transform your expired frozen lasagna into a flavorful and safe stuffed pepper dish.
Ingredients
- 2 Frozen Tv Dinner Lasagna (expired but still safe to consume)
- 4 bell peppers
- 1 tablespoon olive oil
- 1/2 onion, chopped
- 1 clove garlic, minced
- 1 can (14 oz) tomato sauce
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella cheese
- Fresh parsley, for garnish
Instructions
Thaw the frozen lasagna in the refrigerator overnight.
Preheat the oven to 375°F (190°C).
Cut off the tops of the bell peppers and remove the seeds and membranes.
In a large pot of boiling water, blanch the bell peppers for 3-4 minutes, then drain and set aside.
In a skillet, heat the olive oil over medium heat.
Add the chopped onion and minced garlic. Sauté until softened.
Add the tomato sauce, dried basil, dried oregano, salt, and black pepper. Stir well.
Cut the thawed lasagna into small pieces and mix them into the skillet sauce.
Stuff each bell pepper with the lasagna mixture and place them in a baking dish.
Cover the dish with foil and bake for 25 minutes.
Remove the foil and sprinkle the shredded mozzarella cheese over the stuffed peppers.
Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and golden.
Garnish with fresh parsley before serving.
Ensure the stuffed peppers reach an internal temperature of 165°F (74°C) before consuming.
