
Spicy Burrito Breakfast Scramble
A hearty and flavorful breakfast scramble that repurposes expired frozen burritos into a delicious morning dish.
Ingredients
- 2 expired frozen burritos
- 4 eggs
- 1/4 cup milk
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1/4 cup diced tomatoes
- 1/4 cup shredded cheddar cheese
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Optional toppings: salsa, sour cream, chopped fresh cilantro
Instructions
Remove the frozen burritos from their packaging and chop them into bite-sized pieces.
In a bowl, whisk together the eggs, milk, salt, and pepper.
Heat the vegetable oil in a large skillet over medium heat.
Add the diced bell peppers and onions to the skillet and cook until they start to soften.
Add the chopped burritos to the skillet and cook for 2-3 minutes, stirring occasionally.
Pour the egg mixture into the skillet and stir everything together.
Continue cooking, stirring occasionally, until the eggs are fully cooked and scrambled.
Add the diced tomatoes and shredded cheddar cheese to the skillet, stirring until the cheese melts.
Remove from heat and let it cool for a minute.
Serve the breakfast scramble hot with optional toppings like salsa, sour cream, and chopped fresh cilantro.
