Ingredients

  • 2 slightly expired frozen burritos
  • 1 cup shredded cheese
  • 1/4 cup diced onions
  • 1/4 cup diced bell peppers
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/4 cup sour cream

Instructions

1. Preheat a skillet over medium heat.

2. Place the frozen burritos in the skillet and cook until thawed and heated through, about 5 minutes on each side.

3. Remove the burritos from the skillet and set aside.

4. In the same skillet, add the diced onions and bell peppers. Sauté until softened, about 3-4 minutes.

5. Lay one of the thawed burritos flat on the skillet and sprinkle half of the shredded cheese over it.

6. Top with the sautéed onions, bell peppers, tomatoes, and cilantro.

7. Place the second thawed burrito on top and press down gently to seal the quesadilla.

8. Cook for 2-3 minutes on each side until the cheese is melted and the burritos are crispy.

9. Remove from the skillet and let it cool for a minute.

10. Cut the quesadilla into wedges and serve with sour cream on the side.
