
Grilled Veggie Pasta Salad
Expired French salad dressing adds tangy flavor to this colorful grilled vegetable pasta salad.
Ingredients
- 8 oz fusilli pasta
- 2 bell peppers (assorted colors), sliced
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 red onion, sliced
- 1/4 cup expired French salad dressing
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh basil, chopped
Instructions
Cook the fusilli pasta according to the package instructions. Drain and set aside.
Preheat the grill to medium-high heat.
In a large bowl, combine the sliced bell peppers, zucchini, yellow squash, and red onion.
In a small bowl, whisk together the expired French salad dressing, olive oil, salt, and black pepper.
Pour the dressing mixture over the vegetables and toss until well coated.
Grill the vegetables for 8-10 minutes, or until slightly charred and tender.
In a serving bowl, combine the cooked pasta, grilled vegetables, grated Parmesan cheese, and chopped basil.
Toss everything together until evenly mixed.
Serve warm or chilled as a delicious pasta salad.
