Spicy Fish Sauce Chicken Skewers
These grilled chicken skewers are marinated in a spicy fish sauce mixture, using expired fish sauce to reduce food waste while adding a unique flavor.
Ingredients
- 1 pound chicken breast, cut into cubes
- 2 tablespoons expired fish sauce
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon sriracha or hot sauce
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- Wooden skewers, soaked in water
Instructions
In a bowl, whisk together the expired fish sauce, soy sauce, honey, sriracha, minced garlic, and vegetable oil.
Add the chicken cubes to the bowl and toss to coat them evenly with the marinade.
Cover the bowl and let the chicken marinate in the refrigerator for at least 1 hour or overnight.
Preheat the grill to medium-high heat.
Thread the marinated chicken onto the soaked wooden skewers.
Grill the skewers for about 6-8 minutes per side until the chicken is cooked through and slightly charred.
Serve hot as an appetizer or main dish, garnished with fresh herbs if desired.
Note: Ensure the chicken is cooked to an internal temperature of 165°F (74°C) to ensure food safety.
