Ingredients
- 200g firm tofu, cubed
- 2 tablespoons expired fermented black beans, rinsed
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 small onion, sliced
- 1 bell pepper, sliced
- 1 tablespoon soy sauce
- 1 teaspoon cornstarch, dissolved in 2 tablespoons water
- Salt and pepper to taste
- Cooked rice, for serving

Instructions

Heat the vegetable oil in a large pan or wok over medium heat.

Add the minced garlic and sliced onion, and stir-fry for 2 minutes until fragrant.

Add the cubed tofu and stir-fry for 5-6 minutes until lightly browned.

Add the sliced bell pepper and expired fermented black beans, and stir-fry for another 2 minutes.

In a small bowl, mix together soy sauce, cornstarch mixture, salt, and pepper. Pour the mixture into the pan and stir well.

Continue cooking for 2-3 minutes until the sauce thickens and coats the tofu and vegetables.

Serve the stir-fried tofu with cooked rice.
