Ingredients
- 6 pickled hard-boiled eggs, past expiration date
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 stalk celery, finely chopped
- 2 green onions, thinly sliced
- Salt and pepper to taste
- 8 slices of bread
- Lettuce leaves for serving
Instructions
- Peel the pickled hard-boiled eggs and chop them into small pieces.
- In a bowl, combine the chopped eggs, mayonnaise, Dijon mustard, celery, green onions, salt, and pepper. Mix well.
- Toast the bread slices if desired.
- Place lettuce leaves on 4 slices of bread.
- Divide the egg salad mixture evenly among the lettuce-topped bread slices.
- Top with the remaining bread slices to form sandwiches.
- Cut the sandwiches diagonally and serve.
