
Duck Smoked Breast Omelette
A savory omelette made with slightly expired but safe to consume duck smoked breast. The smoky flavor of the duck pairs perfectly with fluffy eggs and fresh herbs for a delicious breakfast or brunch option.
Ingredients
- 3 large eggs
- 50g duck smoked breast, sliced
- 1 tbsp fresh herbs (such as chives or parsley), chopped
- Salt and pepper to taste
- 1 tsp olive oil
Instructions
Crack the eggs into a bowl and whisk until well beaten.
Heat the olive oil in a non-stick skillet over medium heat.
Pour the beaten eggs into the skillet and let them cook undisturbed for a minute or two, until the bottom is set.
Arrange the sliced duck smoked breast on one half of the omelette.
Sprinkle the fresh herbs over the duck.
Season with salt and pepper to taste.
Using a spatula, carefully fold the other half of the omelette over the filling.
Let the omelette cook for another minute or until the eggs are fully set.
Slide the omelette onto a plate and serve hot.
