
Porcini Mushroom Pasta
A simple and delicious pasta dish made with dried porcini mushrooms.
Ingredients
- 150g dried porcini mushrooms
- 300g pasta
- 3 cloves of garlic, minced
- 2 tablespoons olive oil
- 1 cup vegetable broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
Place the dried porcini mushrooms in a bowl and cover with boiling water. Let them soak for 20 minutes, then drain and chop them.
Cook the pasta according to the package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 2 minutes.
Add the chopped porcini mushrooms to the skillet and cook for another 3 minutes.
Pour in the vegetable broth and simmer for 5 minutes, allowing the mushrooms to absorb the flavors.
Add the cooked pasta to the skillet and toss until well coated with the mushroom mixture.
Stir in the grated Parmesan cheese and season with salt and pepper to taste.
Garnish with fresh parsley before serving.
