
Morel Mushroom Soup
This recipe uses slightly expired dried Morel mushrooms to make a delicious and comforting soup.
Ingredients
- 1 cup dried Morel mushrooms
- 4 cups vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
1. In a bowl, soak the dried Morel mushrooms in warm water for 15 minutes.
2. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and cook until softened.
3. Drain the soaked Morel mushrooms and add them to the pot. Cook for 5 minutes, stirring occasionally.
4. Pour in the vegetable broth and bring to a boil. Reduce heat to low and simmer for 20 minutes.
5. Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender and blend until smooth, then return to the pot.
6. Stir in the heavy cream and season with salt and pepper to taste. Heat the soup over low heat for an additional 5 minutes.
7. Serve hot and enjoy!
