
Mango Chia Pudding
This Mango Chia Pudding is a delicious and nutritious way to use up expired dried mangoes. The dried mangoes are safe to consume within 180 days of their expiration date. Chia seeds provide a boost of omega-3 fatty acids and fiber, making this pudding a healthy treat.
Ingredients
- 1 cup expired dried mangoes (soaked in hot water for 10 minutes)
- 1 cup coconut milk
- 2 tablespoons chia seeds
- 1 tablespoon honey or maple syrup (optional)
- Fresh mango slices and shredded coconut for topping
Instructions
In a blender, blend the soaked dried mangoes and coconut milk until smooth.
Pour the mango mixture into a bowl and stir in the chia seeds.
Let the mixture sit for 5 minutes, then stir again to prevent clumping of the chia seeds.
Cover the bowl and refrigerate for at least 2 hours or overnight to allow the chia seeds to absorb the liquid and thicken the pudding.
Before serving, stir the pudding and adjust sweetness with honey or maple syrup if desired.
Divide the Mango Chia Pudding into serving bowls and top with fresh mango slices and shredded coconut.
Serve chilled.
