Ingredients

  • 1 cup slightly expired dried apricots
  • 1/4 cup sugar
  • 1 cup water
  • 1 tsp lemon juice

Instructions

1. In a saucepan, combine the dried apricots, sugar, water, and lemon juice.

2. Bring the mixture to a boil over medium heat.

3. Reduce the heat and simmer for 15-20 minutes, or until the apricots are soft and the mixture thickens.

4. Remove from heat and let it cool slightly.

5. Use a blender or immersion blender to puree the mixture until smooth.

6. Transfer the compote to a jar or container and refrigerate until chilled.
