Ingredients
- 2 cups diced potatoes
- 1 cup diced onion
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 4 cups vegetable broth
- 1 cup milk
- 1/2 cup chopped fresh dill
- Salt and pepper to taste

1. Heat olive oil in a large pot over medium heat.

2. Add onions and garlic, and sauté until translucent.

3. Add diced potatoes and cook for 5 minutes, stirring occasionally.

4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer until potatoes are tender.

5. Using an immersion blender, puree the soup until smooth.

6. Stir in milk and chopped dill. Season with salt and pepper to taste.
