A delightful appetizer made from slightly expired dehydrated mashed potatoes, reducing food waste while ensuring food safety.
Ingredients
- 1 cup slightly expired dehydrated mashed potatoes
- 1/2 cup bread crumbs
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon dried parsley
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 egg, beaten
- 2 tablespoons vegetable oil
Instructions
Rehydrate the dehydrated mashed potatoes according to package instructions.
In a bowl, mix together the rehydrated mashed potatoes, bread crumbs, Parmesan cheese, garlic powder, onion powder, dried parsley, salt, and black pepper.
Shape the mixture into small balls using your hands.
Dip each mashed potato ball into the beaten egg, then roll in more bread crumbs.
Heat vegetable oil in a skillet over medium heat.
Fry the mashed potato balls in the hot oil until golden brown and crispy, about 2-3 minutes per side.
Transfer the cooked mashed potato balls to a paper towel-lined plate to drain excess oil.
