
Cup Noodle Frittata
Create a tasty frittata using slightly expired Cup Noodles, reducing food waste and ensuring food safety.
Ingredients
- 2 packs of slightly expired Cup Noodles
- 4 eggs
- 1/2 cup diced vegetables (e.g. bell peppers, onions)
- 1/2 cup shredded cheese
- Salt and pepper to taste
Instructions
Cook the Cup Noodles according to package instructions, but slightly undercook them.
Drain the noodles and set aside.
In a large bowl, whisk the eggs and season with salt and pepper.
Add the cooked Cup Noodles, diced vegetables, and shredded cheese to the bowl.
Mix everything together.
Preheat a non-stick skillet over medium heat.
Pour the noodle mixture into the skillet.
Cook for 5-7 minutes or until the edges start to set.
Transfer the skillet to a preheated oven and bake at 350°F (175°C) for 15-20 minutes or until the frittata is set in the center.
Remove from the oven and let it cool for a few minutes.
Slice and serve the Cup Noodle frittata warm.
