- 1 cup of coconut milk (slightly expired)
- 1/2 cup of jasmine rice
- 1/4 cup of sugar
- 1/4 teaspoon of salt
- 1/2 teaspoon of vanilla extract
- 1/4 cup of raisins
- 1/4 cup of shredded coconut

Instructions

In a saucepan, combine the coconut milk, jasmine rice, sugar, and salt.

Bring the mixture to a boil over medium heat.

Reduce the heat to low, cover, and simmer for 20 minutes, or until the rice is cooked and the mixture has thickened.

Remove from heat and stir in the vanilla extract, raisins, and shredded coconut.
