Ingredients

  • 2 cups cassava flour
  • 1 cup water
  • 1/2 cup chopped onions
  • 1/2 cup chopped bell peppers
  • 2 cloves garlic, minced
  • 1/4 cup chopped parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Oil for frying

Instructions

In a large bowl, mix together cassava flour, water, onions, bell peppers, garlic, parsley, salt, and black pepper until well combined.

Heat oil in a deep pan or pot over medium heat.

Drop spoonfuls of the cassava flour mixture into the hot oil and fry until golden brown and crispy, about 3-4 minutes per side.

Remove fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
