Ingredients

  • 2 cans of chickpeas
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 red bell pepper, diced
  • 2 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

Heat olive oil in a large pot over medium heat.

Add the onion, garlic, carrot, celery, and red bell pepper to the pot and sauté until the vegetables are softened.

Add the cumin, paprika, turmeric, salt, and pepper to the pot and stir to coat the vegetables in the spices.

Pour in the vegetable broth and bring the mixture to a simmer.

Add the canned chickpeas to the pot and simmer for 20 minutes, allowing the flavors to meld together.
