Ingredients

  • 1 can of expired chickpeas (drained and rinsed)

  • 1 tomato (diced)
  • 1/2 red onion (thinly sliced)
  • 1/4 cup fresh parsley (chopped)
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions
