
Biltong Fried Rice
A flavorful fried rice recipe that uses expired biltong dried cured meat to reduce food waste. The biltong is safe to consume as it is within 180 days after the expiry date.
Ingredients
- 2 cups cooked rice
- 200 grams expired biltong, thinly sliced
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 eggs, beaten
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
Heat vegetable oil in a large pan or wok over medium heat.
Add minced garlic and sauté for 1-2 minutes until fragrant.
Add the expired biltong slices and stir-fry for 3-4 minutes until slightly crispy.
Push the biltong to one side of the pan and pour the beaten eggs onto the empty side.
Scramble the eggs until cooked through and then mix them with the biltong.
Add the mixed vegetables and cook for another 2-3 minutes until they are tender.
Add the cooked rice to the pan and stir-fry everything together for 4-5 minutes.
Pour soy sauce and sesame oil over the fried rice and mix well.
Season with salt and pepper according to taste.
Cook for an additional 1-2 minutes until everything is heated through.
Serve hot and enjoy!
