Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup slightly expired apricot nectar
  • 1/2 cup vegetable oil
  • 1 egg
  • 1 tsp vanilla extract

Instructions

Preheat the oven to 375°F (190°C).

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

In a separate bowl, mix together the apricot nectar, vegetable oil, egg, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Spoon the batter into muffin cups, filling each about two-thirds full.

Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.
