
Cinnamon Applesauce Pancakes
A delicious and fluffy pancake recipe that uses expired but safe applesauce to reduce food waste.
Ingredients
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup expired but safe applesauce
- 1/2 cup milk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
Instructions
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
In a separate bowl, combine the expired but safe applesauce, milk, egg, melted butter, and vanilla extract. Mix well.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix, as it may result in dense pancakes.
Heat a non-stick skillet or griddle over medium heat. Grease with cooking spray or a small amount of butter.
Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
Repeat with the remaining batter.
Serve the pancakes warm with your favorite toppings, such as maple syrup, fresh fruits, or whipped cream.
