
Applesauce Cake
A moist and flavorful cake made with slightly expired but safe applesauce.
Ingredients
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups slightly expired but safe applesauce
- 1/2 cup chopped walnuts (optional)
- Powdered sugar for dusting (optional)
Instructions
Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking pan.
In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the eggs one at a time, followed by the vanilla extract.
Gradually mix in the dry ingredients, alternating with the applesauce, beginning and ending with the dry ingredients.
Fold in the chopped walnuts, if using.
Pour the batter into the prepared baking pan and spread it evenly.
Bake for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Remove from the oven and let it cool in the pan for 10 minutes.
Transfer the cake to a wire rack and let it cool completely.
Dust with powdered sugar, if desired, before serving.
