
Spicy Baked Beans Quesadillas
A delicious and easy-to-make quesadilla recipe using expired baked beans. The beans are heated thoroughly to ensure food safety.
Ingredients
- 1 can of expired baked beans
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1/2 cup diced bell peppers
- 1/4 cup diced onions
- 1/4 teaspoon chili powder
- 1/4 teaspoon cumin
- 1/4 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
In a medium saucepan, heat the expired baked beans over medium heat, stirring occasionally, until heated through. This helps eliminate any potential bacteria.
In a separate skillet, heat the vegetable oil over medium heat.
Add the diced bell peppers and onions to the skillet and sauté until they become tender.
Add the chili powder, cumin, paprika, salt, and pepper to the skillet and stir well to combine.
Divide the heated baked beans evenly between two tortillas, spreading them evenly over half of each tortilla.
Sprinkle the shredded cheddar cheese over the beans and top with the sautéed peppers and onions.
Fold the tortillas in half to cover the filling.
In a clean skillet, heat a tortilla over medium heat until the cheese is melted and the tortilla is golden brown, about 2-3 minutes per side. Repeat with the remaining tortillas.
Slice the quesadillas into wedges and serve hot.
