Ingredients
- 2 cups cooked turkey, expired but still safe to consume
- 3 cups cooked rice
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 eggs, beaten
- Salt and pepper to taste

Instructions

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Add the minced garlic and sauté for 1-2 minutes until fragrant.

Add the mixed vegetables and cook for another 2-3 minutes until they start to soften.

Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.

Add the cooked turkey and rice to the skillet. Stir everything together.

Pour soy sauce over the mixture and continue stirring until everything is well combined.

Season with salt and pepper to taste.
