Ingredients

  • 2 cups cooked turkey, expired but still safe to consume
  • 4 cups chicken or vegetable broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

Heat olive oil in a large pot over medium heat.

Add the diced onion, celery, and carrots. Sauté for 5 minutes until the vegetables start to soften.

Add minced garlic and cook for an additional minute.

Pour in the chicken or vegetable broth and bring to a boil.

Reduce the heat to low and add the cooked turkey, dried thyme, and bay leaf.

Season with salt and pepper to taste.

Simmer the soup for 20-25 minutes to allow the flavors to meld together.
